In a bowl:

1. Grate 2 large potatoes

1a. Grate 1/2 small onion (optional but delicious!)

2. Soak in water with 1 Tbsp lemon juice for 3 minutes

3. Drain and add:

3 eggs

salt & pepper to taste

1/4 cup biscuit mix, flour, matzo meal, or cracker meal

4. Mix until lumps are gone from flour or biscuit mix

 

In a skillet or frying pan:

5. Heat 1 cup oil to 325 degrees

6. Spoon mixture into oil to form pancakes

7. Fry until golden brown

 

Makes about 16 potato latkes.  Traditionally served with sour cream and/or apple sauce.
